"I Hate to Cook" Recipes

Who isn't always looking for easy, family-favorite meals? These are some fast dinners you can throw together.

Baked Chicken
Start with 1 lb. bone-in chicken, either drumsticks or thighs. Preheat oven to 400 degrees. Sprinkle salt & pepper on all the pieces. Place on a foil-lined roasting pan and cook for 40-45 min. This is great because it takes just a few minutes to get ready and while it’s in the oven you’re free to do other things.

Variations:Add Everglades or McCormic’s Grill Mates seasoning along with the salt and pepper.
  • Throw in some cut up vegetables (1 in. slices) around the chicken to cook your sides at the same time. Potatoes, carrots, onions, squash, zucchini, etc.
  • Coat with your favorite BBQ sauce during the last 10 minutes in the oven.
  • Mix 1/8 cup orange marmalade and 1/8 teaspoon of chili-garlic sauce (found in the Asian section) and brush mixture on chicken pieces during last 10 min. of cooking.
  • Marinade the chicken in Italian dressing in a Ziploc baggie before baking.

Baked Fish
Again, same idea: prep it, and throw it in the oven.

Tilapia Filets
  1. Heat oven to 375 degrees and grease baking pan/dish.
  2. Mix 1 tablespoon lemon juice, ¼ teaspoon salt, ¼ teaspoon paprika, and 3 tablespoons of melted butter together.
  3. Place fish in baking dish and drizzle mixture over the fish.
  4. Bake uncovered or 15-20 min. until the fish flakes easily with a fork.

You can alternately mix 1 egg and a splash of milk, dredge the fish through it, and coat with bread crumbs, and bake. Shake ‘n bake!

Salmon Filets
  1. Heat oven to 400 degrees and grease baking dish.
  2. Mix 1 tablespoon Dijon mustard, 2 teaspoons ginger, ¼ cup maple syrup.
  3. Place fish in baking dish and brush mixture over the fish.
  4. Place pineapple slices on top of fish and bake for 15-20 min.

Other Super-Easy/Fast Dinners
  • Heat up a can of hearty soup and serve with rolls.
  • Perdue Shortcuts cooked and cut chicken (in the meat section near the bakery) – heat and serve
  • Ham steaks (located in the same area) – heat on stovetop in a griddle and pour a tiny bit of maple syrup on top during last minute
Keep frozen bags of veggies in the freezer and heat small servings up in the microwave – usually takes 1-2 minutes.
